Homemade banana ice-cream

As my pregnancy progresses I find myself in need of more potassium to help prevent leg cramps and as there are over 420g of the stuff in one banana, I became a huge fan of the fruit!
​Well, not exactly ice cream... More what we like to call "Nice Cream" and made entirely from one ingredient - bananas! 
​I realise there are a ton of recipes for this particular dessert out there in the vast lands of the internet, but as I was making it for myself today, I decided to take some arty photographs and type up my method anyway - just in case some of you out there haven’t heard of this guilt-free pudding before!
Let’s begin making this super quick, healthy, vegan-friendly, gluten-free, nutritious and absolutely delicious ice-cream! 

Banana ice-cream

Ingredients:
  • Bananas (one per person)  -  I did say that this was a one-ingredient recipe!
Super Quick Recipe:
Step 1: Slice and Freeze
  • Peel & slice up bananas.
  • Put the slices into a cellophane food bag (or a tub) and place it in the freezer.
  • Wait until it freezes over, usually about 2 hours.

You can leave the bananas frozen until desired - so you can always have a supply ready.  Freezing is also a good way to preserve the fruit, so if you have any browning in your fruit bowl, now would be a good time to chop them up and freeze for later yumminess!
Then, when you fancy a quick dessert -
​Step 2: Blend & Serve
  • Take the frozen bananas out of the freezer and leave them on the kitchen counter to thaw out for about 30 minutes.
  • Blend or pulse (using a hand blender or a food processor) until it becomes smooth and adapts the ice-cream like consistency.
Blending may take a few minutes, but be patient as you want it smooth and not lumpy - I am hoping the guide photos below will be of help!

  • Lastly, place the creamy deliciousness into a dessert dish and serve. 

No additives. No fuss.

Quick and simple dessert

Date Syrup Topping

It is extremely delish served with a date syrup on top. So much so that I never have it without the topping!

​Ingredients:
  • Soft pitted dates (use 7 per person)

Super Quick Recipe:
  • Add a few dates into a glass and add a small amount of water on top, just to moisten (you don’t want to drown them!).
  • Let them stand (I usually do this just after I take my bananas out of the freezer, so the dates have 30 minutes or so to soften)
  • ​Blend for a few minutes, until you have a thick, syrup-like consistency.

Use this beautiful healthy topping to embellish the already perfect banana ice-cream dessert and enjoy.​ I had a friend coming over for Friday afternoon catch-up and I served her this healthy snack. She loved it! I am a pudding person but she finished it quicker than I did! A success!

Quick homemade ice-cream!
We've been enjoying this dessert after our Sunday dinner (when you want something super light but sweet a few hours after) and been serving it to friends at parties for about a year now and it's always very much appreciated. 
Added sugar-free, vegan-friendly, paleo-friendly and completely healthy which means very few of your guests will have any excuses for refusing this dessert (I am mindful of people with allergies though). Best of all - takes only a few minutes to prepare!
