Banana Wine Made Simple

Banana wine is a heavy, deliciously full bodied white wine that deserves some serious respect!  It packs a strong alcohol punch that seems through the intense banana flavour.  

As with many wine recipes, older fruit carry more sugar - so hunt around your local store when they are reducing the fruit and veg to find those browning, reduced bananas that will help you eek out as much flavour and sugar for your hommade wine! 

Below is my video for a very basic, yet simple banana wine:-

​Ingredients:-

  • 9lbs (4.25kg) of brown / black bananas
  • 2kg Sugar
  • Juice of two lemons
  • 500g Sultanas
  • Water to 1 gallon
  • Yeast and Nutrient

Method:-

  • Peel your banans and place in  a big pot. Add a few skins for tannin
  • Add juice of 2 lemons, along with 2kg sugar and sultanas
  • Pour over 1 gallon of boiling water and simmer for 45 min - 1 hour
  • Give the occasional stir
  • When cool, add your yeast and nutrient
  • Pour into sterilised fermentation bucket and loosely cover
  • Set aside, and wait for the fermentation to begin.
  • Once the initial vigorous fermentation has calmed down, strain through a sieve into a demijohn
  • Fit an airlock and allow to ferment till dry. 
  • Rack, and store for as long as possible!
