Making Mead Made Simple
(a simple mead recipe)
Mead is an ancient drink, a drink of legend, made by the vikings, the Celts and the Baltic nations long before modern brewing came into quiddity. Blaand is another ancient alcoholic drink you may wish to try to make, but for now - back to mead!
There are so many variations of mead today, each region has developed a unique style of making it, from distilling honey to give a 70% alcohol mead, through to using naturally occurring wild yeasts. Some people flavour it with herbs or berries, others enjoy it just as it is.

Ingredients:-
- 2kg (+/-) according to desired sweetness of runny honey
- Desired spices such as cloves and cinnamon
- Water to 1 gallon
- Yeast and Nutrient
Method:-
- Pour your chosen amount of runny honey into your big saucepan
- Add spice (cloves and cinnamon)
- Pour over 1 gallon of boiling water and simmer for 45 min - 1 hour
- Give the occasional stir
- When cool, add your yeast and nutrient
- Pour into sterilised demijohn and fit an airlock
- Set aside, and wait for the fermentation to begin.
